Drunken Monkey Jam: A Sweet and Boozy Delight

This decadent Drunken Monkey Jam is the perfect blend of sweet bananas, warming spices, and a delightful rum kick. Enjoy it on toast, biscuits, or as a unique topping for ice cream!

Ingredients
  

  • * 3 to 4 large ripe bananas chopped
  • * Juice of 1 lime
  • * ½ cup granulated sugar
  • * ½ cup packed light brown sugar
  • * ¾ cup water
  • * 1 teaspoon vanilla extract
  • * 1 teaspoon ground cinnamon
  • * 2 tablespoons dark rum
  • * Pinch of salt optional, enhances flavor

Instructions
 

  • Combine the chopped bananas, lime juice, granulated sugar, brown sugar, water, vanilla extract, cinnamon, rum, and salt (if using) in a medium saucepan.
  • Bring the mixture to a simmer over medium heat, stirring frequently to prevent sticking.
  • Reduce the heat to low and continue to simmer, stirring occasionally, for about 20-25 minutes, or until the jam has thickened to your desired consistency. The jam should coat the back of a spoon.
  • To test for doneness, place a small spoonful of jam on a chilled plate. If it wrinkles slightly when pushed with your finger, it's ready.
  • Remove the jam from the heat and let it cool slightly before transferring it to a sterilized jar.
  • Seal the jar tightly and let the jam cool completely before storing in the refrigerator. The flavor will deepen over time.

Notes

For a smoother jam, you can use an immersion blender to puree the mixture after it has cooked. Adjust the amount of sugar to your liking depending on the ripeness of your bananas. Other spices like nutmeg or allspice can be added for variation. If you prefer a non-alcoholic version, simply omit the rum.
