Ingredients
  

Chicken and Vegetables

  • 1 lb cooked chicken breast shredded or diced
  • 1 cup diced zucchini
  • 1 cup diced bell pepper any color
  • 1 cup diced onion

Tzatziki Sauce and Cheese

  • 1 cup tzatziki sauce store-bought or homemade
  • 1 cup shredded mozzarella cheese
  • 1 cup feta cheese crumbled

Instructions
 

  • Preheat oven to 375°F (190°C).
  • In a large bowl, combine the cooked chicken (ing_1), zucchini (ing_2), bell pepper (ing_3), and onion (ing_4).
  • Stir in the tzatziki sauce (ing_5) until the chicken and vegetables are evenly coated.
  • Pour the chicken mixture into the prepared baking dish.
  • Sprinkle the mozzarella (ing_6) and feta cheese (ing_7) over the top.
  • Bake for 30-45 minutes, or until heated through and the cheese is melted and bubbly.
  • Let cool slightly before serving.

Notes

This casserole can be made ahead of time and reheated. Leftovers can be stored in the refrigerator for up to 3 days.
