Easy Chipotle Ranch Grilled Chicken Burrito

A quick and flavorful burrito packed with grilled chicken, chipotle ranch dressing, and your favorite burrito fillings.

  • Grill or Grill Pan For grilling the chicken
  • Large skillet For cooking the rice and beans

Ingredients
  

Chicken Marinade

  • 1 lb Chicken breasts Boneless, skinless
  • 2 tbsp Chipotle peppers in adobo sauce Minced
  • 1 tbsp Olive oil

Burrito Filling

  • 1 cup Cooked rice
  • 1 cup Cooked black beans
  • 1 cup Shredded cheese Monterey Jack or cheddar
  • 1 cup Sour cream or Ranch dressing
  • 12 Burrito-size tortillas

Instructions
 

  • Marinate chicken (ing_1) in chipotle peppers (ing_2) and olive oil (ing_3) for at least 30 minutes.
  • Grill or pan-fry the chicken (ing_1) until cooked through.
  • Warm the tortillas (ing_8).
  • Spread a layer of sour cream or ranch dressing (ing_7) on each tortilla (ing_8).
  • Add cooked rice (ing_4), black beans (ing_5), shredded cheese (ing_6), and grilled chicken (ing_1) to each tortilla (ing_8).
  • Roll up the burritos (ing_8) tightly.
  • Serve immediately.

Notes

For a spicier burrito, add more chipotle peppers. You can also add other vegetables, such as onions, peppers, or corn.
