Main ingredients

  • 1 cup Cottage Cheese full-fat or low-fat
  • 0.5 cup Applesauce or finely grated apple
  • 1 large Egg
  • 1 tbsp Honey or Maple Syrup adjust to liking
  • 1 cup Rolled Oats old-fashioned
  • 0.5 tsp Baking Powder
  • 0.5 tsp Ground Cinnamon
  • 1 pinch Salt

Instructions
 

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a medium bowl, whisk together cottage cheese, applesauce (or grated apple), egg, and honey (or maple syrup) until smooth.
  • In a separate small bowl, whisk together rolled oats, baking powder, cinnamon, and salt.
  • Pour the dry ingredients into the wet mixture and stir gently until just combined. Do not overmix.
  • Drop rounded tablespoons of the mixture onto the prepared baking sheet.
  • Bake for 15-20 minutes, or until the edges are golden brown and the bites are set.
  • Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store cooled bites in an airtight container in the refrigerator for 3-4 days. They can also be frozen.
