Easy Cowboy Casserole

A comforting and easy casserole that's perfect for busy weeknights or family dinners, featuring ground beef, corn, creamy soup, and a crispy tater tot topping.

  • 1 lb ground beef can also use ground turkey or chicken
  • 1 onion diced
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried parsley
  • 1 tsp onion powder
  • 1 tbsp minced garlic
  • 2 tbsp Worcestershire sauce
  • 10 oz corn drained
  • 10 oz cream of mushroom soup
  • 0.25 cup sour cream
  • 1.5 cups shredded Colby Jack cheese divided
  • 1 30 oz bag frozen crispy crowns or tater tots

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a large skillet over medium-high heat, cook ground beef and diced onion until beef is browned and onion is tender. Drain excess grease.

  • Stir in salt, pepper, paprika, parsley, onion powder, minced garlic, and Worcestershire sauce. Cook for 1 minute.

  • Stir in drained corn, cream of mushroom soup, and sour cream until combined.

  • Stir in 1 cup of Colby Jack cheese until melted.

  • Pour meat mixture into a 9x13 inch baking dish.
  • Arrange frozen crispy crowns or tater tots evenly over the meat mixture.

  • Sprinkle remaining 1/2 cup of Colby Jack cheese over the topping.

  • Bake for 25-30 minutes, or until heated through and topping is golden brown and crispy.

Notes

For extra crispy tater tots, you can bake them on a separate baking sheet for about 10 minutes before placing them on top of the casserole. Casserole can be assembled a day in advance, covered and refrigerated.
