Prep Time 15 minutes

Equipment

  • small baking sheet or plate Must fit in your freezer
  • Parchment paper
  • Medium bowl
  • Spoon Teaspoon or tablespoon

Ingredients

Hauptzutaten

  • 1 cup Greek yogurt Plain or vanilla; recommended for thickness
  • 0.33 cup Peanut butter Creamy or crunchy, natural works great
  • 2 tbsp Honey or maple syrup Use maple syrup for vegan option
  • 0.5 tsp Vanilla extract
  • 0.25 tsp Cinnamon Optional, but recommended
  • 1 tbsp Chia seeds or ground flaxseed
  • 2 tbsp Nuts Chopped (peanuts, almonds, walnuts, pecans, etc.)
  • 0.33 cup Chocolate chips Mini chocolate chips recommended, or chopped regular chips

Instructions

  • Line a small baking sheet or plate that fits in your freezer with parchment paper.
  • In a medium bowl, combine the Greek yogurt, peanut butter, honey or maple syrup, vanilla extract, and cinnamon. Stir really well until everything is completely smooth and there are no streaks of peanut butter left.
  • Add the chia seeds (or flaxseed), chopped nuts, and mini chocolate chips to the yogurt mixture. Give it another gentle stir to distribute everything evenly.
  • Use a spoon (a teaspoon or tablespoon, depending on how big you want your bites) to drop dollops of the mixture onto the prepared baking sheet. Try to make them roughly the same size so they freeze evenly.
  • Place the baking sheet carefully into your freezer. Let them freeze for at least 1-2 hours, or until they are firm all the way through.
  • Once frozen solid, pop them off the parchment paper and enjoy immediately!

Notes

These bites need to stay cold. Store in an airtight container or freezer-safe bag in the freezer for up to 2-3 months. Use Greek yogurt for best texture; regular yogurt is too watery. Mix thoroughly to ensure peanut butter is fully incorporated. Keep bites small (tablespoon-sized or smaller) for quick freezing and easy eating.
