Easy Ground Beef and Hash Brown Casserole

A hearty and delicious ground beef and hash brown casserole that's perfect for a comforting weeknight meal or a potluck favorite. This recipe is simple to make with minimal fuss but maximum flavor.

  • 1 pound ground beef
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon fine sea salt
  • 0.25 teaspoon fresh ground black pepper
  • 1 (10.5 ounce) can cream of mushroom soup
  • 1 cup sour cream
  • 1 cup low-sodium beef broth
  • 32 ounces frozen diced hash brown potatoes thawed
  • 2 cups shredded cheddar cheese divided
  • 0.5 cup grated Parmesan cheese
  • 0.25 cup chopped fresh parsley
  • 0.5 cup Panko breadcrumbs
  • 2 tablespoons unsalted butter melted

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Brown the ground beef in a large skillet over medium-high heat. Drain off any excess grease.

  • Add the diced onion and minced garlic to the skillet with the beef. Cook until the onion is soft and translucent, about 5-7 minutes.

  • Stir in the dried thyme, smoked paprika, salt, and pepper. Stir to coat the beef and vegetables.

  • Pour in the cream of mushroom soup, sour cream, and beef broth. Stir until well combined.

  • Gently fold in the thawed hash brown potatoes and 1 cup of the shredded cheddar cheese.

  • Pour the mixture into a 9x13 inch baking dish and spread evenly.
  • In one small bowl, mix together the remaining 1 cup cheddar cheese and Parmesan cheese with the chopped fresh parsley.

  • In another small bowl, combine the Panko breadcrumbs with the melted butter, stirring to coat.

  • Sprinkle the cheese and parsley mixture evenly over the casserole. Then, sprinkle the buttered Panko breadcrumbs over the cheese.

  • Bake for 25-30 minutes, or until heated through and the topping is golden brown.

Notes

While this recipe is pretty darn perfect as is, feel free to add a cup of frozen peas or corn, substitute other cheeses like Monterey Jack or mozzarella, add a pinch of cayenne pepper for heat, or use cream of chicken or celery soup instead of mushroom.
