Easy Salmon Boursin Pasta

A creamy, dreamy, and incredibly easy salmon pasta dish perfect for weeknight dinners. Minimal effort, maximum flavor!

  • 14.5 ounces protein pasta like rotini or penne
  • 5 ounces Boursin cheese garlic and herb flavor recommended
  • 4 fillets salmon skin removed
  • 1 pint cherry tomatoes
  • 3 cloves garlic minced
  • 1 tablespoon olive oil
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 3 cups baby spinach

Instructions
 

  • Cook pasta according to package directions.

  • Heat olive oil in a large skillet over medium-high heat.

  • Season salmon fillets with onion powder, paprika, salt, and pepper.

  • Sear salmon fillets for 3-4 minutes per side until cooked through and golden-brown. Remove from skillet and set aside.

  • Add minced garlic to the same skillet and sauté for about 1 minute until fragrant.

  • Add cherry tomatoes to the skillet and cook for 5-7 minutes until softened and starting to burst.

  • Stir in Boursin cheese until it melts into a creamy sauce.

  • Add baby spinach and stir until wilted, about 1-2 minutes.

  • Drain cooked pasta and add it to the skillet with the sauce. Toss to coat.

  • Gently flake the cooked salmon into bite-sized pieces and add to the pasta. Toss gently to combine.

Notes

This recipe is very adaptable. You can substitute salmon with shrimp or chicken, or add other quick-cooking vegetables. For a little heat, add red pepper flakes with the garlic.
