Easy Spinach Blueberry Salad

This vibrant salad combines the sweetness of blueberries with the savory notes of spinach and goat cheese, creating a delicious and healthy meal. It's quick to prepare and perfect for a light lunch or side dish.

Ingredients
  

  • * 1 medium-large Avocado diced
  • * 4 cups Baby spinach
  • * 2 cups Blueberries fresh
  • * 1/4 cup fresh Mint chopped
  • * 1 cup Walnuts raw, roughly chopped
  • * 1/2 cup Goat cheese crumbled
  • * 1/4 cup Olive oil
  • * 2 tbsp Balsamic vinegar
  • * 1 tsp Honey
  • * Juice of 1/2 Lemon
  • * 1 tsp Garlic powder
  • * Salt and pepper to taste

Instructions
 

  • In a large bowl, combine the baby spinach, blueberries, and chopped mint.
  • In a small bowl, whisk together the olive oil, balsamic vinegar, honey, lemon juice, and garlic powder. Season with salt and pepper to taste.
  • Add the diced avocado and crumbled goat cheese to the spinach mixture.
  • Pour the dressing over the salad and toss gently to combine. Be careful not to over-toss, as this can bruise the spinach.
  • Sprinkle the chopped walnuts over the salad.
  • Serve immediately and enjoy!

Notes

For a sweeter salad, add a bit more honey to the dressing. If you don't have goat cheese, feta cheese or crumbled blue cheese are great substitutes. You can also add other nuts or seeds, such as pecans or sunflower seeds. To make this salad ahead of time, prepare the dressing and store it separately. Just before serving, toss the spinach, blueberries, and other ingredients together and add the dressing.
