Easy Spinach Cottage Cheese Flagels (Flat Bagels) 🧀🌿

Ingredients
  

Wet Ingredients

  • 1 cup cottage cheese
  • 1 tbsp olive oil
  • 1 egg lightly beaten

Dry Ingredients & Mix-ins

  • 1.5 cups all-purpose flour
  • 3 tsp baking powder
  • 0.5 tsp salt
  • 2 oz baby spinach micro chopped
  • 0.5 cup shredded mozzarella cheese

Instructions
 

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a large bowl, combine the cottage cheese and olive oil. Mix well.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Add the dry ingredients to the wet ingredients and gently mix until just combined. Do not overmix.
  • Stir in the micro-chopped spinach and mozzarella cheese.
  • Drop spoonfuls of the dough onto the prepared baking sheet, leaving some space between each flagel.
  • Brush the tops of the flagels with the lightly beaten egg.
  • Bake for 12-15 minutes, or until golden brown and cooked through.

Notes

For a richer flavor, use full-fat cottage cheese. These flagels are best served fresh.
