  • 4 tbsp Peanut butter natural, drippy recommended; well-stirred
  • 3 tbsp Peanuts roasted and salted; chopped roughly if large
  • 4 tbsp Dark chocolate bar or chips, at least 70% cocoa recommended
  • 0.25 tsp Coconut oil
  • Sea salt flaky, optional sprinkle

Instructions
 

  • First things first, get your bananas ready. Peel them and slice each banana into about 6-8 rounds, depending on how thick you like them (about 1/2 inch thick works well).
  • Lay the banana slices out on a baking sheet lined with parchment paper. This is important so they don't stick!
  • Now, grab your peanut butter. Dollop a little spoonful onto the center of half of the banana slices.
  • Place the remaining banana slices on top of the peanut butter dollops to create little banana-peanut butter sandwiches.
  • Sprinkle your chopped peanuts evenly over the tops of the peanut butter layers. You can gently press them in a little.
  • Pop the baking sheet into the freezer for at least 1-2 hours, or until the banana sandwiches are completely frozen and firm. Don't rush this step!
  • Once the banana bites are frozen, it's chocolate time! In a small microwave-safe bowl, combine the dark chocolate and coconut oil.
  • Microwave on 50% power in 30-second intervals, stirring well after each interval, until the chocolate is smooth and completely melted. Be careful not to overheat it! You can also do this over a double boiler on the stovetop.
  • Take the frozen banana bites out of the freezer. Using a fork or a toothpick inserted gently into a bite, dip each one into the melted chocolate, letting any excess drip off.
  • Immediately place the chocolate-coated bite back onto the parchment-lined baking sheet. Sprinkle a tiny pinch of sea salt on top of the warm chocolate if you like that sweet and salty mix (I always do!).
  • Once all the bites are dipped, return the baking sheet to the freezer for at least 30 minutes, or until the chocolate shell is completely set and firm.
