Ingredients
  

Artichokes & Prep

  • 4 large artichokes
  • 1 tablespoon salt
  • 1 teaspoon black pepper

Garlic Butter Sauce

  • 0.25 cup unsalted butter melted
  • 4 cloves garlic minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Prepare artichokes: Cut off stems; trim thorny leaf tips. Halve lengthwise and remove fuzzy choke.
  • In a mixing bowl, combine melted butter, minced garlic, lemon juice, and lemon zest.
  • Season artichoke halves generously with salt and pepper.
  • Place artichoke halves cut-side up on a baking sheet. Pour garlic butter mixture over artichokes, ensuring they are well coated.
  • Roast for 40-45 minutes, or until artichokes are tender and slightly browned.
  • Serve immediately with extra lemon wedges, if desired.

Notes

For extra flavor, add a sprinkle of red pepper flakes to the garlic butter mixture.
