Instructions
Preheat oven to 400°F (200°C).
In a mixing bowl, combine the okra, olive oil, minced garlic, chili powder, salt, and pepper.
Toss to coat the okra evenly with the oil and spices.
Spread the okra in a single layer on a baking sheet.
Roast for 20 minutes, or until the okra is tender and slightly browned, flipping halfway through.
Remove from oven and let cool slightly before serving.
Serve as a side dish with your favorite protein or enjoy as a snack.
Notes
For spicier okra, add more chili powder or a pinch of cayenne pepper.
