Instructions
Preheat oven to 375°F (190°C). Grease a 9x5 inch loaf pan.
In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, Greek yogurt, egg, minced garlic, onion powder, Italian seasoning, salt, and pepper. Gently mix until just combined.
Add chopped parsley (optional) and mix again.
Shape the mixture into a loaf and place it in the prepared loaf pan.
In a small bowl, combine melted butter, grated Parmesan cheese, and minced garlic for the topping.
Spread the topping evenly over the meatloaf.
Bake for 40-45 minutes, or until the internal temperature reaches 165°F (74°C).
Let the meatloaf rest for 10 minutes before slicing and serving. Garnish with chopped parsley (optional)
Notes
For a richer flavor, use bone-in, skin-on chicken thighs instead of ground chicken breast.
