Garlic Parmesan Chicken Meatloaf

Ingredients
  

Meatloaf Ingredients

  • 1.5 lbs ground chicken (or turkey)
  • 0.5 cup breadcrumbs (or almond flour for gluten-free)
  • 0.5 cup grated Parmesan cheese
  • 0.25 cup plain Greek yogurt (for moisture)
  • 1 egg

Topping Ingredients

  • 2 tbsp melted butter
  • 2 tbsp grated Parmesan cheese
  • 1 garlic clove finely minced or pressed
  • 4 garlic cloves minced
  • 1 tsp onion powder
  • 0.5 tsp dried Italian seasoning
  • 2 tbsp chopped fresh parsley optional
  • Salt & pepper to taste
  • Chopped parsley for garnish

Instructions
 

  • Preheat oven to 375°F (190°C). Grease a 9x5 inch loaf pan.
  • In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, Greek yogurt, egg, minced garlic, onion powder, Italian seasoning, salt, and pepper. Gently mix until just combined.
  • Add chopped parsley (optional) and mix again.
  • Shape the mixture into a loaf and place it in the prepared loaf pan.
  • In a small bowl, combine melted butter, grated Parmesan cheese, and minced garlic for the topping.
  • Spread the topping evenly over the meatloaf.
  • Bake for 40-45 minutes, or until the internal temperature reaches 165°F (74°C).
  • Let the meatloaf rest for 10 minutes before slicing and serving. Garnish with chopped parsley (optional)

Notes

For a richer flavor, use bone-in, skin-on chicken thighs instead of ground chicken breast.
