Greek Roasted Potatoes With Peppers & Feta

Crispy roasted potatoes tossed with sweet peppers and salty feta cheese, seasoned with Greek herbs.

Ingredients
  

Vegetables

  • 1 kg Potatoes Yukon Gold or russet, cut into 2cm cubes
  • 1 Red bell pepper Chopped
  • 1 Yellow bell pepper Chopped

Seasoning & Cheese

  • 4 tbsp Olive oil
  • 1 tsp Dried oregano
  • 1 tsp Garlic powder
  • 150 g Feta cheese Crumbled

Instructions
 

  • Preheat oven to 200°C (400°F).
  • In a large bowl, toss potatoes, bell peppers, olive oil, oregano, and garlic powder until well combined.
  • Spread the mixture in a single layer on a baking sheet.
  • Roast for 35-40 minutes, or until potatoes are tender and slightly browned, stirring halfway through.
  • Remove from oven and sprinkle with crumbled feta cheese.
  • Serve immediately and enjoy!

Notes

For extra flavor, add a squeeze of lemon juice before serving.
