Instructions
Preheat oven to 200°C (400°F).
In a large bowl, toss potatoes, bell peppers, olive oil, oregano, and garlic powder until well combined.
Spread the mixture in a single layer on a baking sheet.
Roast for 35-40 minutes, or until potatoes are tender and slightly browned, stirring halfway through.
Remove from oven and sprinkle with crumbled feta cheese.
Serve immediately and enjoy!
Notes
For extra flavor, add a squeeze of lemon juice before serving.
