Grilled Veggie Skewers

These vibrant grilled veggie skewers are a delicious and healthy side dish or light meal, perfect for summer barbecues or a weeknight dinner. The balsamic marinade adds a sweet and tangy flavor that complements the grilled vegetables beautifully.

Ingredients
  

  • * 1 large red bell pepper cut into 1-inch pieces
  • * 1 large yellow bell pepper cut into 1-inch pieces
  • * 8 oz cremini mushrooms stems removed and halved or quartered if large
  • * 2 medium zucchini cut into 1-inch thick rounds
  • * 1 medium red onion cut into 1-inch pieces
  • * 1 pint cherry tomatoes
  • * 2 tbsp olive oil
  • * 1 tbsp balsamic vinegar
  • * 1 tsp dried thyme or 1 tsp Italian seasoning
  • * 1/2 tsp salt
  • * 1/4 tsp black pepper
  • * 12-16 wooden skewers soaked in water for at least 30 minutes

Instructions
 

  • **Prepare the vegetables:** Wash and cut all the vegetables into similarly sized pieces. Ensure the pieces are large enough to hold their shape on the skewer but not so large they take too long to cook.
  • **Make the marinade:** In a medium bowl, whisk together the olive oil, balsamic vinegar, thyme (or Italian seasoning), salt, and pepper.
  • **Marinate the vegetables:** Add the prepared vegetables to the bowl with the marinade and toss gently to coat evenly. Let them marinate for at least 15 minutes, or up to 2 hours in the refrigerator for maximum flavor.
  • **Assemble the skewers:** Thread the vegetables onto the soaked wooden skewers, alternating colors and types of vegetables for an attractive presentation.
  • **Preheat grill:** Preheat your grill to medium-high heat.
  • **Grill the skewers:** Place the skewers on the preheated grill and cook for 5-7 minutes per side, or until the vegetables are tender and slightly charred. Turn occasionally to ensure even cooking.
  • **Serve:** Remove the skewers from the grill and serve immediately. They are delicious on their own or with a side of your favorite dipping sauce, such as hummus or tzatziki.

Notes

* For extra flavor, add a clove of minced garlic to the marinade.
* Feel free to substitute your favorite vegetables, such as eggplant, asparagus, or portobello mushrooms.
* If you don't have wooden skewers, you can use metal ones. However, metal skewers get very hot, so use caution when handling them.
* If grilling indoors, ensure proper ventilation.
