Gyro Bowls (Meatballs with Tzatziki, Lemon Rice, and Cucumber Salad)

Ingredients
  

Meatballs

  • 1 lb Ground lamb
  • 1 cup Breadcrumbs
  • 1 tsp Dried oregano
  • 1 tsp Garlic powder

Tzatziki Sauce

  • 1 cup Greek yogurt
  • 2 cloves Garlic Minced
  • 1 tbsp Lemon juice
  • 1 cucumber Cucumber Diced
  • 1 cup Lemon Rice Cooked
  • 1 tbsp Olive oil

Instructions
 

  • Prepare the meatballs: Combine ground lamb, breadcrumbs, oregano, and garlic powder in a bowl. Mix well and form into small meatballs.
  • Cook the meatballs in a large skillet over medium heat until browned and cooked through.
  • Make the tzatziki sauce: Combine Greek yogurt, minced garlic, and lemon juice in a bowl. Mix well and set aside.
  • Prepare the cucumber salad: Dice the cucumber and toss with a little olive oil and salt.
  • Cook the lemon rice according to package directions, adding lemon zest and juice for extra flavor.
  • Assemble the bowls: Divide the lemon rice among four bowls. Top with meatballs, tzatziki sauce, and cucumber salad.
  • Garnish with fresh herbs, if desired.

Notes

For a vegetarian option, substitute ground lamb with lentils or vegetables.
