Instructions
Prepare the meatballs: Combine ground lamb, breadcrumbs, oregano, and garlic powder in a bowl. Mix well and form into small meatballs.
Cook the meatballs in a large skillet over medium heat until browned and cooked through.
Make the tzatziki sauce: Combine Greek yogurt, minced garlic, and lemon juice in a bowl. Mix well and set aside.
Prepare the cucumber salad: Dice the cucumber and toss with a little olive oil and salt.
Cook the lemon rice according to package directions, adding lemon zest and juice for extra flavor.
Assemble the bowls: Divide the lemon rice among four bowls. Top with meatballs, tzatziki sauce, and cucumber salad.
Garnish with fresh herbs, if desired.
Notes
For a vegetarian option, substitute ground lamb with lentils or vegetables.
