Ingredients
  

Zucchini Prep

  • 2 medium zucchini washed and trimmed
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder

Breadcrumbs & Seasoning

  • 1 cup panko breadcrumbs
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions
 

  • Preheat air fryer to 400°F (200°C).
  • Cut zucchini into fry shapes (about 1/2 inch thick).
  • Toss zucchini with olive oil, garlic powder, salt, and pepper in a bowl.
  • In a separate bowl, combine panko breadcrumbs and Italian seasoning.
  • Dredge each zucchini fry in the breadcrumb mixture, ensuring they are fully coated.
  • Arrange zucchini fries in a single layer in the air fryer basket, ensuring they are not overcrowded.
  • Air fry for 10-15 minutes, flipping halfway through, until golden brown and crispy.
  • Serve immediately and enjoy!

Notes

For extra crispy fries, you can lightly spray the fries with cooking spray before air frying.
