  • 0.5 cup rolled oats or almond flour Rolled oats give a nice chew, while almond flour keeps it wonderfully tender and gluten-free.

  • 2 cups cottage cheese The secret ingredient that makes this bake high in protein and super creamy! Choose your favorite – full fat or low fat, it all works.

Instructions
 

  • Preheat your oven to 350°F (175°C) and lightly grease a baking dish.
  • Peel, core, and dice the apple into bite-sized pieces.

  • In a large bowl, combine the cottage cheese, eggs, maple syrup (or honey), and vanilla extract. Whisk or fork until smooth.

  • Stir in the rolled oats (or almond flour), baking powder, and cinnamon until just incorporated.

  • Gently fold in the diced apple pieces.

  • Pour the mixture into the prepared baking dish and spread evenly.
  • Bake for 30-40 minutes, or until set in the center and lightly golden brown on top.

Notes

Once cooled completely, store in an airtight container in the refrigerator for up to 3-4 days. Reheat in the microwave or oven.
