Ingredients
  

Chicken

  • 1.5 lbs boneless, skinless chicken breasts cut into bite-sized pieces
  • 2 tablespoons olive oil
  • to taste salt and black pepper
  • 0.5 teaspoon garlic powder
  • 5 cloves garlic minced
  • 0.25 cup honey
  • 2 tablespoons soy sauce Use low-sodium if you prefer.
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon butter

Creamy Rice

  • 1.5 cups jasmine or white rice
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 0.5 cup cream cheese softened
  • 0.5 cup grated Parmesan cheese
  • 1 tablespoon butter
  • 1 teaspoon Italian seasoning
  • to taste salt and pepper
  • Fresh parsley for garnish

Instructions
 

  • Season the chicken with salt, black pepper, and garlic powder.

  • Heat olive oil in a large skillet over medium-high heat. Add seasoned chicken and cook until browned and cooked through. Remove chicken and set aside.

  • In the same skillet, add minced garlic and cook for about a minute until fragrant.

  • Add honey, soy sauce, apple cider vinegar, and butter to the skillet. Stir to combine and bring to a gentle simmer.

  • Return chicken to the skillet and toss to coat in the sauce. Simmer for 2-3 minutes until the sauce thickens.

  • Rinse the rice under cold water.

  • In a medium saucepan, combine rice, chicken broth, and butter. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until liquid is absorbed and rice is tender.

  • Stir heavy cream, mozzarella cheese, cream cheese, Parmesan cheese, and Italian seasoning into the cooked rice until melted and creamy. Season with salt and pepper.
