Instructions
Preheat oven to 400°F (200°C).
In a bowl, whisk together honey and Dijon mustard to create the glaze.
Season chicken breasts with salt and pepper.
Toss broccoli and carrots with olive oil, salt, and pepper.
Place chicken and vegetables on a baking sheet.
Brush chicken with honey mustard glaze.
Roast for 35-40 minutes, or until chicken is cooked through and vegetables are tender, basting halfway through.
Serve immediately.
Notes
For extra flavor, marinate the chicken in the glaze for at least 30 minutes before roasting.
