Ingredients
  

Chicken

  • 4 pieces Chicken breasts
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper

Glaze and Vegetables

  • 1 cup Honey
  • 1 /4 cup Dijon mustard
  • 1 tablespoon Olive oil
  • 1 pound Broccoli florets
  • 1 cup Carrots, chopped

Instructions
 

  • Preheat oven to 400°F (200°C).
  • In a bowl, whisk together honey and Dijon mustard to create the glaze.
  • Season chicken breasts with salt and pepper.
  • Toss broccoli and carrots with olive oil, salt, and pepper.
  • Place chicken and vegetables on a baking sheet.
  • Brush chicken with honey mustard glaze.
  • Roast for 35-40 minutes, or until chicken is cooked through and vegetables are tender, basting halfway through.
  • Serve immediately.

Notes

For extra flavor, marinate the chicken in the glaze for at least 30 minutes before roasting.
