Hot Honey Chicken Bowls

Tender chicken coated in a sticky, sweet, and slightly spicy glaze, piled high on fluffy rice with perfectly cooked veggies. Pure comfort in a bowl, and incredibly easy and quick.

  • 4 boneless, skinless chicken breasts chicken breasts Diced into bite-sized pieces
  • 4 cloves fresh garlic Minced
  • 0.5 cup hot honey Sweet with a gentle kick
  • 2 tbsp fresh lime juice For brightness
  • 0.25 cup low-sodium soy sauce For savory depth
  • 2 cups cooked rice or quinoa For serving
  • salt and pepper To taste
  • 2 tbsp olive oil For sautéing
  • 2 cups frozen mixed vegetables Cooked according to package directions

Instructions
 

  • Dice your boneless, skinless chicken breasts into nice, bite-sized pieces. Sprinkle them generously with salt and pepper.
  • Grab those garlic cloves and mince them up. You want them small and fragrant.
  • In a medium bowl, whisk together the hot honey, fresh lime juice, and low-sodium soy sauce. Give it a good stir until it's all beautifully combined.
  • Heat the olive oil in a large skillet over medium-high heat. Once it’s nice and shimmery, add your seasoned chicken pieces. Cook them, stirring occasionally, until they're beautifully browned on all sides and cooked all the way through.
  • Now, toss that minced garlic into the skillet with the chicken. Cook for just about 1 minute, stirring constantly. You want it to become fragrant, but be careful not to burn it.
  • Pour that glorious hot honey mixture right over the chicken in the skillet. Stir everything together so each piece of chicken is coated in that sticky, irresistible glaze. Let it bubble and cook for another 2-3 minutes, just until the sauce thickens up a bit.
  • While your chicken is getting its glaze on, cook your frozen mixed vegetables according to the package directions.
  • Divide your cooked rice or quinoa into serving bowls. Top each bowl generously with that delicious hot honey chicken and a helping of your perfectly cooked mixed vegetables.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave. The flavors meld together even more beautifully the next day!
