Jalapeno Cheddar Greek Yogurt Bagels 🌶️🧀🥯

These quick and easy jalapeno cheddar Greek yogurt bagels are a delicious and healthy alternative to traditional bagels. They're packed with flavor and require no yeast!

Ingredients
  

  • * 1 cup all-purpose flour 🏵️
  • * 1 cup low/non-fat Greek yogurt 🥛
  • * 2 tsp baking powder 🥄
  • * 1/4 tsp salt 🧂
  • * 2 small jalapeno peppers deseeded if preferred 🌶️
  • * 1/2 cup shredded cheddar cheese plus more to top 🧀
  • * 1 egg whisked 🥚
  • * 1 tbsp olive oil for greasing the pan 🧴
  • * Optional: Everything Bagel Seasoning 🌿

Instructions
 

  • Preheat your oven to 400°F (200°C). Lightly grease a baking sheet with olive oil.
  • Finely dice the jalapeno peppers. If you prefer less heat, remove the seeds and membranes before dicing.
  • In a large bowl, combine the flour, baking powder, and salt.
  • Add the Greek yogurt, whisked egg, and diced jalapenos to the dry ingredients. Gently mix until just combined. Do not overmix.
  • Stir in the shredded cheddar cheese.
  • Divide the dough into 6-8 equal portions. Shape each portion into a small ball, then gently flatten slightly to create a bagel shape. You can use your fingers to create a small hole in the center of each bagel, if desired.
  • Place the bagels onto the prepared baking sheet. Brush the tops lightly with a little extra whisked egg and sprinkle with additional cheddar cheese and/or everything bagel seasoning.
  • Bake for 15-20 minutes, or until golden brown and cooked through. The internal temperature should reach 200°F (93°C).
  • Let the bagels cool slightly on the baking sheet before serving.

Notes

* For a richer flavor, use full-fat Greek yogurt.
* If you don't have everything bagel seasoning, you can use a sprinkle of sesame seeds, poppy seeds, or dried onion flakes instead.
* These bagels are best served fresh but can be stored in an airtight container at room temperature for up to 2 days. They can also be frozen for longer storage.
* Feel free to experiment with other cheeses, herbs, or spices. Some delicious additions might be diced red onion, sun-dried tomatoes, or different types of peppers.
