Ingredients
  

Cheeses

  • 2 cups shredded sharp cheddar cheese
  • 2 cups shredded monterey jack cheese

Wet and Spice Ingredients

  • 9 large eggs, lightly beaten
  • 1 teaspoon garlic powder
  • 0.125 teaspoon salt
  • 0.5 cup chopped pickled jalapeños, drained
  • 0.25 cup chopped pimentos, drained
  • 1 tablespoon butter for greasing the baking dish

Instructions
 

  • Preheat oven to 350°F (175°C). Grease an 8x8 inch baking dish with butter.
  • In a large bowl, combine the shredded cheddar and Monterey Jack cheeses.
  • Add the lightly beaten eggs, garlic powder, and salt to the cheese mixture.
  • Stir in the chopped jalapeños and pimentos.
  • Mix until all ingredients are well combined.
  • Pour the cheese mixture into the prepared baking dish.
  • Bake for 20-25 minutes, or until the cheese bites are set and lightly golden brown.
  • Let cool slightly before cutting into squares and serving.

Notes

For a milder flavor, reduce the amount of jalapeños.
