These Keto Cheddar Popcorn Bites are a crispy, cheesy, and guilt-free snack that's perfect for movie nights or any time you're craving a satisfying crunch. They are incredibly easy to make and ready in under 30 minutes, making them a fantastic option for spontaneous cravings or even as a homemade gift.

  • 3 large egg whites free of any yolk
  • 1 cup grated Parmesan cheese or other Italian-style hard cheese, finely grated
  • popcorn extract optional, for flavor variety
  • herbs or spices optional, for flavor variety (e.g., garlic powder, onion powder, smoked paprika, chili flakes)

Instructions
 

  • Preheat your oven to 300°F (150°C).
  • Whip the egg whites in a clean, dry bowl until they form stiff peaks.

  • Gently fold in the grated Parmesan cheese until mostly incorporated, being careful not to deflate the egg whites.

  • If using, gently fold in any optional popcorn extract, herbs, or spices until evenly distributed.

  • Line a baking sheet with parchment paper. Drop tablespoonfuls of the mixture onto the baking sheet to form small, bite-sized mounds.
  • Bake for 20-25 minutes, or until the bites are beautifully golden brown and feel crisp to the touch.
  • Let them cool completely on the baking sheet to continue crisping up.

Notes

Store completely cooled bites in an airtight container at room temperature for 3-4 days. To revive crispness, bake at 250°F (120°C) for about 5 minutes.
