Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together the almond flour, baking powder, and salt.
In a separate bowl, combine the shredded cheddar cheese, egg, and melted butter.
Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
Drop spoonfuls of the mixture onto the prepared baking sheet, leaving space between each puff.
Bake for 12-15 minutes, or until golden brown and crispy.
Let cool slightly on the baking sheet before serving.

Store leftovers in an airtight container at room temperature for up to 3 days.
