Ingredients
  

Wet Ingredients

  • 0.25 cup heavy whipping cream
  • 0.25 cup sweetened condensed milk
  • 2 tablespoons lime juice
  • 1 tablespoon unsalted butter, softened

Dry Ingredients

  • 4 tablespoons lime zest
  • 2 cups white chocolate chips
  • 2 cups crushed graham crackers

Instructions
 

  • In a medium bowl, combine heavy cream, sweetened condensed milk, and lime juice. Whisk until smooth.
  • In a separate bowl, melt white chocolate chips using a double boiler or microwave. Stir until smooth.
  • Add the softened butter to the melted white chocolate and stir until combined.
  • Gently fold the lime zest into the melted chocolate mixture.
  • Gradually add the wet ingredients to the chocolate mixture, stirring until well combined.
  • Stir in the crushed graham crackers until evenly distributed.
  • Cover the bowl and refrigerate for at least 2 hours, or until firm.
  • Once firm, use a spoon to scoop out small portions and roll into balls. Place on a baking sheet lined with parchment paper.

Notes

For a richer flavor, use key lime juice instead of regular lime juice. You can also dip the truffles in melted white chocolate for an extra layer of deliciousness.
