Layered Zucchini Ricotta Melts with Marinara

A delicious and easy layered bake featuring zucchini, ricotta, marinara, and mozzarella.

  • Baking dish Approximately 8x8 inches
  • Grater For shredding mozzarella

Ingredients
  

Vegetables

  • 2 medium zucchini sliced lengthwise
  • 1 tsp dried oregano
  • Fresh basil for garnish

Cheese & Sauce

  • 1 cup ricotta cheese
  • 1 cup marinara sauce
  • 0.5 cup shredded mozzarella

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Lightly grease an 8x8 inch baking dish.
  • Layer half of the zucchini slices in the baking dish.
  • Spread half of the ricotta cheese evenly over the zucchini.
  • Top with half of the marinara sauce and half of the mozzarella cheese.
  • Repeat layers with remaining zucchini, ricotta, marinara, and mozzarella.
  • Sprinkle with dried oregano.
  • Bake for 20-25 minutes, or until zucchini is tender and cheese is melted and bubbly. Garnish with fresh basil before serving.

Notes

For a richer flavor, you can add a pinch of garlic powder or red pepper flakes to the ricotta cheese.
