Instructions
In a large mixing bowl, combine the rolled oats, shredded coconut, and protein powder.
In a separate bowl, whisk together the almond butter, maple syrup, lemon zest, lemon juice, vanilla extract, and salt.
Pour the wet ingredients into the bowl with the dry ingredients.
Mix thoroughly until all ingredients are well combined and the mixture is slightly sticky.
Roll the mixture into 1-inch balls.
Place the balls on a baking sheet lined with parchment paper.
Refrigerate for at least 30 minutes to allow the balls to firm up.
