Ingredients
  

Dry Ingredients

  • 1 cup Rolled oats
  • 0.5 cup Shredded unsweetened coconut
  • 1 scoop Vanilla protein powder

Wet Ingredients

  • 2 tablespoons Almond butter Or cashew butter
  • 2 tablespoons Maple syrup Or honey
  • 1 Lemon Zest of 1 lemon
  • 2 tablespoons Lemon juice Fresh lemon juice
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt

Instructions
 

  • In a large mixing bowl, combine the rolled oats, shredded coconut, and protein powder.
  • In a separate bowl, whisk together the almond butter, maple syrup, lemon zest, lemon juice, vanilla extract, and salt.
  • Pour the wet ingredients into the bowl with the dry ingredients.
  • Mix thoroughly until all ingredients are well combined and the mixture is slightly sticky.
  • Roll the mixture into 1-inch balls.
  • Place the balls on a baking sheet lined with parchment paper.
  • Refrigerate for at least 30 minutes to allow the balls to firm up.
