Ingredients
  

Eggplant Preparation

  • 1 large eggplant sliced into 1/2 inch rounds

Seasoning and Flavor

  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons parsley chopped fresh

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Slice the eggplant into 1/2-inch rounds.
  • In a large bowl, toss the eggplant slices with olive oil, minced garlic, lemon zest, lemon juice, salt, and pepper.
  • Arrange the eggplant slices in a single layer on a baking sheet.
  • Roast for 25-30 minutes, or until the eggplant is tender and slightly browned, flipping halfway through.
  • Garnish with chopped fresh parsley before serving.

Notes

For extra flavor, you can add a pinch of red pepper flakes.
