Instructions
Cook orzo according to package directions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant (about 30 seconds).
Add shrimp to the skillet and cook until pink and opaque, about 2-3 minutes per side.
Stir in cooked orzo, chicken broth, lemon juice, and lemon zest. Bring to a simmer.
Reduce heat to low, stir in butter and parmesan cheese until melted and creamy.
Season with salt and pepper to taste.
Serve immediately and garnish with extra lemon zest or parsley if desired.
Notes
For a spicier kick, add a pinch of red pepper flakes.
