Magic Pineapple Coconut Cobbler 🍍🥥✨

Tropical flavor magic in every bite! This easy cobbler combines the sweetness of pineapple with the creamy richness of coconut for a delightful dessert.

Ingredients
  

  • * 1/2 cup 1 stick unsalted butter 🧈
  • * 1 cup all-purpose flour 🌾
  • * 1 1/2 teaspoons baking powder ✨
  • * 1/4 teaspoon salt 🧂
  • * 1 cup granulated sugar 🍚
  • * 1 cup canned coconut milk full-fat 🥥
  • * 1 tablespoon vanilla extract 🍨
  • * 1 teaspoon coconut extract optional
  • * 21 oz can crushed pineapple in juice not drained 🍍
  • * 1/2 cup shredded coconut optional, for topping 🥥

Instructions
 

  • Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  • In a medium bowl, whisk together the flour, baking powder, and salt.
  • In a separate large bowl, cream together the butter and sugar until light and fluffy.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Stir in the coconut milk, vanilla extract, and coconut extract (if using).
  • Pour the crushed pineapple (with its juice) into the prepared baking dish.
  • Pour the batter evenly over the pineapple.
  • Sprinkle with shredded coconut (optional) for added texture and flavor.
  • Bake for 35-40 minutes, or until the topping is golden brown and the filling is bubbly.
  • Let cool slightly before serving. Enjoy warm!

Notes

For a richer flavor, use full-fat coconut milk. You can substitute other tropical fruits like mango or peaches for the pineapple. If you prefer a less sweet cobbler, reduce the sugar by 1/4 cup. Serve with a scoop of vanilla ice cream or whipped cream for an extra decadent treat.
