In a medium saucepan, combine corn (ing_1), mayonnaise (ing_2), sour cream (ing_3), and lime juice (ing_4). Cook over medium heat for 5-7 minutes, or until heated through.
Stir in chili powder (ing_5), cumin (ing_6), salt (ing_7), and pepper (ing_8).
Remove from heat and let cool slightly.
Transfer to a serving bowl.
Top with cotija cheese (ing_9) and cilantro (ing_10).
Serve immediately with tortilla chips or your favorite dippers.
Notes
For a spicier dip, add a pinch of cayenne pepper. You can also add other toppings like crumbled bacon or a squeeze of extra lime juice.
