Ingredients
  

Corn and Base

  • 2 cups fresh or frozen corn kernels
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 teaspoon lime juice

Seasoning and Toppings

  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 /2 teaspoon salt
  • 1 /4 teaspoon black pepper
  • 1 /4 cup cotija cheese crumbled
  • 1 /4 cup cilantro chopped

Instructions
 

  • If using fresh corn, remove kernels from the cob.
  • In a medium saucepan, combine corn (ing_1), mayonnaise (ing_2), sour cream (ing_3), and lime juice (ing_4). Cook over medium heat for 5-7 minutes, or until heated through.
  • Stir in chili powder (ing_5), cumin (ing_6), salt (ing_7), and pepper (ing_8).
  • Remove from heat and let cool slightly.
  • Transfer to a serving bowl.
  • Top with cotija cheese (ing_9) and cilantro (ing_10).
  • Serve immediately with tortilla chips or your favorite dippers.

Notes

For a spicier dip, add a pinch of cayenne pepper. You can also add other toppings like crumbled bacon or a squeeze of extra lime juice.
