Ingredients
  

Wet Ingredients

  • 3 ripe bananas mashed
  • 1 tbsp white miso paste

Dry Ingredients

  • 1.5 cups flour all-purpose
  • 0.5 cups brown sugar packed
  • 1 tsp baking soda
  • 0.5 cups walnuts chopped, optional

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  • In a large bowl, mash the bananas until smooth.
  • Stir in the white miso paste until well combined.
  • In a separate bowl, whisk together the flour, brown sugar, and baking soda.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Stir in the chopped walnuts (if using).
  • Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

For a richer flavor, use dark brown sugar. You can also add other nuts or seeds, such as pecans or sunflower seeds.
