Mixed Berry Mini Trifles

Layers of buttery pound cake, mixed berries, and creamy vanilla custard create delightful individual trifles.

Equipment

  • Small trifle glasses or bowls Approximately 6 ounces each

Ingredients
  

Cake Layer

  • 6 ounces Pound cake Cubed

Berry Mixture

  • 1 cup Mixed berries Fresh or frozen (strawberries, blueberries, raspberries)
  • 2 tablespoons Sugar
  • 1 tablespoon Lemon juice

Custard

  • 1 cup Vanilla custard Store-bought or homemade
  • 1 tablespoon Whipped cream Optional, for topping

Instructions
 

  • Cube the pound cake into small pieces.
  • In a bowl, gently toss the mixed berries with sugar and lemon juice.
  • Layer the trifle glasses: start with a layer of pound cake, followed by a layer of berries, and then a layer of custard.
  • Repeat the layers (cake, berries, custard) until the glasses are almost full.
  • Refrigerate for at least 30 minutes to allow the flavors to meld.
  • Before serving, top with a dollop of whipped cream, if desired.

Notes

For a richer flavor, use homemade vanilla custard. You can also substitute other berries or fruits.
