No-Bake Date Balls

Ridiculously easy and oh-so-good for you! These date balls are a healthy treat that can be whipped up in minutes when sweet cravings hit.

Main ingredients

  • 1 cup roasted cashews Provide a lovely creamy base and healthy fats.
  • 0.75 cup almonds Another powerhouse of nutrients and a delightful crunch.
  • 0.25 cup desiccated coconut For texture and that hint of tropical sweetness. If it seems a bit dry, don't worry, the dates will do their magic!
  • 0.25 teaspoon sea salt Just a pinch to balance out the sweetness and make all the flavors pop!
  • 0.25 teaspoon vanilla bean powder Optional. Makes everything feel extra special.
  • 1.5 cup pitted Medjool dates The stars of the show! Make sure they're nice and soft so they can bind everything together. If yours feel a bit dry, soak them in warm water for 10 minutes and drain them well before using.

Optional Toppings

  • 1 tablespoon desiccated coconut For rolling the balls in – gives them a pretty, finished look.
  • 1 tablespoon Wholesome Yum blanched almond flour A lovely alternative for a slightly different texture and flavor.

Instructions
 

  • First up, the dry stuff: Grab your food processor. Toss in the roasted cashews, almonds, desiccated coconut, sea salt, and that optional vanilla bean powder if you're feeling fancy. Give it a good pulse or two. You want it to look like nice, coarse crumbs. We're not making flour here, just getting everything ready to mingle.
  • Now for the sticky magic: Add your pitted Medjool dates to the food processor with the crumbly mixture. Now, process everything together until it starts to form a nice, sticky dough. It should hold together when you pinch it. If, by chance, your mixture seems a little too dry and isn't sticking, no worries! Just add another tablespoon of dates and process again. Keep adding, one tablespoon at a time, until it reaches that perfect, pliable dough consistency.
  • Time to roll: Get your hands a little sticky (it's part of the fun!) and start rolling the dough into small balls. Aim for about 1 inch in diameter. They should be about the size of a ping pong ball, or maybe a little smaller.
  • Dress them up (if you want!): This is where you can get creative! If you like, grab those optional toppings. Place the desiccated coconut or almond flour in a small bowl, and gently roll each date ball in it until it's nicely coated. It just adds a little something extra, you know?
  • Chill out: Pop those beautiful date balls into the refrigerator for at least 30 minutes. This helps them firm up and makes them even more delicious. Trust me, the wait is worth it!

Notes

These date balls are wonderfully forgiving and can be customized with various nuts, seeds, spices, or even cocoa powder. They are naturally vegan and plant-based.
