No-Bake Snickerdoodle Energy Balls

  • 1 cup rolled oats Old-fashioned rolled oats work best
  • 0.5 cup almond butter Natural almond butter with just almonds listed
  • 0.25 cup honey Maple syrup is a great vegan alternative
  • 0.25 cup ground flaxseed
  • 1 teaspoon cinnamon
  • 0.5 teaspoon vanilla extract

Instructions
 

  • Combine Everything: Grab a medium-sized mixing bowl. Dump in your rolled oats, almond butter, honey, ground flaxseed, cinnamon, and vanilla extract.
  • Mix Until Just Combined: Now, grab a sturdy spoon or spatula and stir everything together. You want to mix until all the ingredients are nicely incorporated. It might seem a little sticky or shaggy at first, but just keep stirring until you don't see any dry spots of oats or flaxseed. I like to use the back of the spoon to really mash the almond butter and honey into the oats.
  • Roll 'Em Up: Once you have a well-combined mixture, it's time for the fun part! Take small portions of the dough and roll them between your palms to form bite-sized balls. Aim for about 1-inch in diameter – like a mini donut hole! If the mixture feels too sticky to roll, you can lightly dampen your hands with a little water.
  • Chill Out: Place your beautifully rolled energy balls onto a plate or baking sheet lined with parchment paper (this helps prevent sticking). Pop them into the refrigerator for at least 30 minutes. This chilling time is crucial – it helps them firm up and hold their shape. Trust me, a little chill makes all the difference!

Notes

These energy balls are best kept chilled in an airtight container in the refrigerator and will stay delicious for up to a week. They can also be frozen for 2-3 months.
