Parmesan Zucchini and Corn

A simple and flavorful dish featuring zucchini, corn, and parmesan cheese.

Ingredients
  

Produce

  • 0.25 tsp Basil, dried
  • 2 tbsp Cilantro, fresh leaves
  • 1 cup Corn, canned or roasted frozen kernels
  • 3 cloves Garlic minced
  • 4 Zucchini, medium

Dairy & Pantry

  • 0.25 tsp Oregano, dried
  • 0.25 tsp Thyme, dried
  • 2 tbsp Lime juice, freshly squeezed
  • 1 Kosher salt and freshly ground black pepper to taste
  • 2 tbsp Olive oil
  • 0.5 cup Parmesan cheese grated

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Add minced garlic and cook until fragrant (about 30 seconds).
  • Add zucchini and cook until slightly softened (about 5 minutes).
  • Stir in corn, basil, oregano, and thyme. Cook for another 2-3 minutes.
  • Add lime juice, salt, and pepper to taste.
  • Remove from heat and stir in half of the grated parmesan cheese.
  • Serve immediately, garnished with fresh cilantro and remaining parmesan cheese.

Notes

This recipe can be easily adapted to your liking. Feel free to add other vegetables or herbs.
