Instructions
Heat olive oil in a large skillet over medium heat.
Add minced garlic and cook until fragrant (about 30 seconds).
Add zucchini and cook until slightly softened (about 5 minutes).
Stir in corn, basil, oregano, and thyme. Cook for another 2-3 minutes.
Add lime juice, salt, and pepper to taste.
Remove from heat and stir in half of the grated parmesan cheese.
Serve immediately, garnished with fresh cilantro and remaining parmesan cheese.
Notes
This recipe can be easily adapted to your liking. Feel free to add other vegetables or herbs.
