Instructions
Whisk together eggs, milk, and vanilla extract in a shallow dish.
Dip each slice of challah bread into the egg mixture, ensuring both sides are coated.
Place 3-4 mini peanut butter cups in the center of each bread slice.
Roll up each slice tightly and secure with a toothpick.
Melt butter in a large skillet over medium heat. Cook the rolls for 2-3 minutes per side, until golden brown.
Transfer the rolls to a baking sheet and bake at 350°F (175°C) for 5-7 minutes, or until heated through.
Dust with powdered sugar before serving.
Notes
For a richer flavor, use brown sugar instead of powdered sugar. You can also add chocolate chips to the batter for extra chocolatey goodness.
