Raspberry Coconut Dream Slice

A delicious no-bake slice with a buttery biscuit base, raspberry jam filling, and a creamy coconut topping.

Equipment

  • 8x8 inch baking tin Or similar sized tin
  • Mixing bowls

Ingredients
  

Base

  • 1 packet Plain biscuits (e.g., Digestive or Marie)
  • 0.25 cup Melted butter

Filling & Topping

  • 1 can (395g) Sweetened condensed milk
  • 0.5 cup Raspberry jam
  • 1 cup Desiccated coconut

Instructions
 

  • Crush the biscuits into fine crumbs. You can use a food processor or a bag and rolling pin.
  • Mix the biscuit crumbs with the melted butter until well combined.
  • Press the biscuit mixture firmly into the bottom of the prepared baking tin.
  • Spread the raspberry jam evenly over the biscuit base.
  • In a separate bowl, combine the sweetened condensed milk and desiccated coconut.
  • Spread the coconut mixture evenly over the raspberry jam layer.
  • Refrigerate for at least 2 hours, or until set.
  • Cut into squares and serve.

Notes

For a richer flavor, use salted butter. You can also add other berries to the jam layer.
