Raspberry Jam Coconut Slice – Tea Time Favourite
A delicious and easy-to-make coconut slice with a raspberry jam filling.

desiccated coconut

raspberry jam
Instructions
Preheat oven to 180°C (350°F).
Combine flour and sugar in a bowl. Cut in softened butter until mixture resembles breadcrumbs.
Press mixture into the bottom of a greased baking tray.
Spread raspberry jam evenly over the base.
In a separate bowl, combine desiccated coconut, extra sugar, and beaten egg. Mix well.
Spread the coconut mixture evenly over the jam layer.
Bake for 20-25 minutes, or until golden brown.
Allow to cool completely before cutting into slices.
Notes
Store in an airtight container at room temperature for up to 3 days.
