Raspberry Jam Coconut Slice – Tea Time Favourite

A delicious and easy-to-make coconut slice with a raspberry jam filling.

Equipment

  • Baking tray Approximately 20x30cm
  • Mixing bowls At least two

Ingredients
  

Base

  • 1 cup flour
  • 0.5 cup sugar
  • 0.5 cup butter softened

Topping

  • 1 cup desiccated coconut
  • 0.25 cup sugar extra
  • 1 egg beaten
  • 0.5 cup raspberry jam

Instructions
 

  • Preheat oven to 180°C (350°F).
  • Combine flour and sugar in a bowl. Cut in softened butter until mixture resembles breadcrumbs.
  • Press mixture into the bottom of a greased baking tray.
  • Spread raspberry jam evenly over the base.
  • In a separate bowl, combine desiccated coconut, extra sugar, and beaten egg. Mix well.
  • Spread the coconut mixture evenly over the jam layer.
  • Bake for 20-25 minutes, or until golden brown.
  • Allow to cool completely before cutting into slices.

Notes

Store in an airtight container at room temperature for up to 3 days.
