Reese's Explosion Banana Bread

A decadent and flavor-packed banana bread with bursts of Reese's peanut butter cups and chocolate chips, topped with more peanut butter and chocolate goodness.

  • 4 ripe bananas about 1 1/2 cups mashed
  • 6 tablespoons butter softened
  • 0.75 cup light brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1.25 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.25 teaspoon salt
  • 8 ounce bag Reese's Minis
  • 0.5 cup chocolate chips
  • 0.5 cup Reese's Peanut Butter Chips

For the Topping

  • 10 Reese's Miniatures roughly chopped
  • 0.25 cup Reese's Peanut Butter Chips melted
  • 0.25 cup chocolate chips melted

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease and flour your favorite loaf pan.
  • In a large bowl, mash the ripe bananas with a fork until mostly smooth, a few lumps are okay.

  • Add the softened butter and light brown sugar to the mashed bananas and mix until smooth and well combined.

  • Beat in the egg and vanilla extract until beautifully incorporated.

  • In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.

  • Slowly add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

  • Gently fold in the Reese's Minis, chocolate chips, and Reese's Peanut Butter Chips. Reserve a few chips to press into the top before baking if desired.

  • Pour the batter into the prepared loaf pan and spread evenly.
  • Bake for 50-65 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the banana bread cool in the pan for about 10 minutes, then carefully invert it onto a wire rack to cool completely.
  • While the bread is cooling, melt the Reese's Peanut Butter Chips and chocolate chips together in a small bowl (microwave in short bursts or use a double boiler).

  • Drizzle the melted topping over the cooled banana bread and sprinkle with chopped Reese's Miniatures.

Notes

Ripe bananas are key for sweetness and flavor. Don't overmix the batter. Oven temperatures can vary, so keep an eye on the bread; tent with foil if it browns too quickly. Mashed bananas can be prepped a day ahead and stored in the fridge.
