Roasted Strawberry Whipped Ricotta Toast

Ingredients
  

Roasted Strawberries

  • 1 pint Strawberries Halved or quartered
  • 1 tablespoon Olive oil
  • 1 tablespoon Sugar Granulated or brown sugar

Whipped Ricotta & Toast

  • 8 ounces Ricotta cheese
  • 2 tablespoons Honey
  • 1 teaspoon Vanilla extract
  • 2 slices Bread Your favorite bread, toasted

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Toss strawberries (ing_1) with olive oil (ing_2) and sugar (ing_3) on a baking sheet.
  • Roast for 10-15 minutes, or until softened and slightly caramelized.
  • While strawberries roast, whip ricotta (ing_4) with honey (ing_5) and vanilla extract (ing_6) until smooth and creamy.
  • Toast bread (ing_7) to your liking.
  • Spread whipped ricotta (ing_4) on toast (ing_7) and top with roasted strawberries (ing_1).
  • Serve immediately and enjoy!

Notes

For a richer flavor, use mascarpone cheese instead of ricotta.
