Sprinkle flour over sausage; cook for 1 minute, stirring constantly. Gradually whisk in milk until smooth and thickened. Season with salt, pepper, and optional red pepper flakes.
In a bowl, whisk together eggs and milk; season with salt and pepper. Melt butter in a separate skillet and pour in egg mixture. Cook, stirring occasionally, until eggs are set but still slightly moist.
Spread sausage gravy evenly over the crescent roll crust. Top with scrambled eggs, cheddar cheese, and mozzarella cheese.
Bake for 15-20 minutes, or until crust is golden brown and cheese is melted and bubbly.
Garnish with chopped green onions, fresh parsley, or diced tomatoes (optional) and serve immediately.
