  • 2 cups cooked Italian chicken sausage, crumbled
  • 2 tsp dried basil
  • 0.5 cup chives, chopped
  • 1 tsp garlic powder
  • 1.5 cups wilted and squeezed spinach Make sure to squeeze out all the extra water.
  • 0.5 cup sun-dried tomatoes, chopped
  • 4 large eggs
  • 2.5 cups all-purpose flour
  • 1 tbsp baking powder
  • 0.5 tsp red pepper flakes For a tiny hint of warmth. Feel free to adjust this to your spice preference!
  • 2 tsp salt
  • 0.25 cup ground flaxseed
  • 1.5 cups shredded cheddar cheese
  • 1.5 cups crumbled feta cheese
  • 1.75 cups plain 2% Greek yogurt

Instructions

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a large bowl, toss together your chopped turkey ham, crumbled chicken sausage, dried basil, chives, garlic powder, spinach, and sun-dried tomatoes. Give it a good mix.
  • In a separate, medium-sized bowl, crack four eggs and whisk them until blended.
  • Pour the whisked eggs into a large bowl. Add the all-purpose flour, baking powder, red pepper flakes, and salt. Stir until just combined.
  • Gently stir in the ground flaxseed, shredded cheddar cheese, crumbled feta cheese, and Greek yogurt. It will start to look like a thick batter.
  • Carefully fold the meat and vegetable mixture into the batter, combining everything without mashing it.
  • Using a spoon or cookie scoop, drop generous dollops of the biscuit mixture onto the prepared baking sheet. A rustic look is part of their charm.
  • Bake for 18-22 minutes, or until beautifully golden brown on top and cooked through.
