Seared Scallops with Zesty Cilantro Lime Sauce

Ingredients
  

Scallops

  • 1 pound Dry-packed sea scallops Patted dry
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Cilantro Lime Sauce

  • 1 cup Cilantro Fresh, chopped
  • 1 lime Lime juice Freshly squeezed
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Garlic powder

Instructions
 

  • Pat scallops dry with paper towels and season with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat.
  • Sear scallops for 2-3 minutes per side, until golden brown and cooked through.
  • While scallops sear, whisk together cilantro, lime juice, olive oil, salt, and garlic powder in a bowl.
  • Once scallops are cooked, remove from skillet and set aside.
  • Pour cilantro-lime sauce into the skillet and bring to a simmer for 1 minute.
  • Return scallops to the skillet and toss gently to coat with the sauce.
  • Serve immediately.

Notes

For extra flavor, add a pinch of red pepper flakes to the sauce.
