Cilantro Lime Sauce

Fresh, chopped

Lime juice

Instructions
Pat scallops dry with paper towels and season with salt and pepper.
Heat olive oil in a large skillet over medium-high heat.
Sear scallops for 2-3 minutes per side, until golden brown and cooked through.
While scallops sear, whisk together cilantro, lime juice, olive oil, salt, and garlic powder in a bowl.
Once scallops are cooked, remove from skillet and set aside.
Pour cilantro-lime sauce into the skillet and bring to a simmer for 1 minute.
Return scallops to the skillet and toss gently to coat with the sauce.
Serve immediately.
Notes
For extra flavor, add a pinch of red pepper flakes to the sauce.
