Sloppy Joe Casserole

A comforting and easy casserole with a sloppy joe twist.

Ingredients
  

Sloppy Joe Mixture

  • 1 pound Ground beef (or ground turkey)
  • 1 small onion diced
  • 1 green bell pepper diced
  • 2 cloves garlic minced
  • 1 can (15 oz) tomato sauce

Other Ingredients

  • 0.5 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon yellow mustard
  • 3 cups cooked pasta (elbow macaroni or penne)
  • 2 cups shredded cheddar cheese divided
  • 1 cup crushed crackers or French fried onions (optional, for topping)

Instructions
 

  • Brown the ground beef in a large skillet over medium-high heat. Drain off any excess grease.
  • Add the diced onion and green bell pepper to the skillet and cook until softened, about 5 minutes.
  • Stir in the minced garlic and cook for 1 minute more.
  • Add the tomato sauce, ketchup, brown sugar, Worcestershire sauce, and yellow mustard. Season with salt and pepper to taste. Simmer for 10 minutes, stirring occasionally.
  • Preheat oven to 350°F (175°C).
  • In a 9x13 inch baking dish, combine the cooked pasta and the sloppy joe mixture. Stir in 1 cup of the shredded cheddar cheese.
  • Top with the remaining 1 cup of shredded cheddar cheese and the crushed crackers or French fried onions (if using).
  • Bake for 20-25 minutes, or until heated through and bubbly.

Notes

Leftovers can be stored in the refrigerator for up to 3 days.
