Soft Farmer’s Cheese Cookies 🧀🍪

These soft and subtly sweet cookies are a delightful treat, perfect with a cup of tea or coffee. The farmer's cheese gives them a unique, creamy texture.

Ingredients
  

  • - 1 cup butter chilled 🧈
  • - 7.5–8 oz farmer's cheese ricotta or cottage cheese work too 🧀
  • - 2 cups all-purpose flour 🌾
  • - 1/4 teaspoon salt 🧂
  • - 2 egg yolks 🥚
  • - 2 tablespoons water cold or chilled 💧
  • - 1/2–1 cup granulated sugar

Instructions
 

  • In a large bowl, beat the chilled butter with an electric mixer until light and fluffy. This is crucial for a tender cookie.
  • Add the drained farmer's cheese and beat until well combined. The mixture will be slightly chunky.
  • In a separate bowl, whisk together the flour and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.
  • Beat in the egg yolks one at a time, followed by the vanilla extract (if using) and cold water. Mix until just combined.
  • Stir in the granulated sugar. Start with 1/2 cup and add more if desired.
  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Roll the dough into 1-inch balls and place them about 2 inches apart on the prepared baking sheets.
  • Bake for 12-15 minutes, or until the edges are lightly golden brown.
  • Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

For a richer flavor, use brown sugar instead of granulated sugar, or a combination of both. If the dough seems too dry, add a tablespoon of cold water at a time until it comes together. These cookies are best enjoyed fresh, but can be stored in an airtight container at room temperature for up to 3 days.
