Instructions
Preheat oven to 350°F (175°C).
In a large bowl, combine the sliced yellow squash and chopped onion.
In a separate bowl, mix together the butter, sour cream, cream of chicken soup (or mushroom), and cheddar cheese. Season with salt and pepper.
Pour the sauce mixture over the squash and onion, stirring gently to combine.
Pour the mixture into a greased 9x13 inch baking dish.
In a small bowl, combine the crushed crackers and melted butter. Sprinkle evenly over the casserole.
Bake for 40-45 minutes, or until golden brown and bubbly.
Let cool slightly before serving.
Notes
This recipe can be easily doubled for larger gatherings.
