Southern Squash Casserole

Ingredients
  

Vegetables

  • 2 pounds yellow squash sliced
  • 0.5 cup onion chopped

Sauce and Topping

  • 2 tablespoons butter
  • 0.5 cup sour cream
  • 1 can (10.5 oz) cream of chicken soup or cream of mushroom for vegetarian option
  • 1 cup shredded cheddar cheese
  • salt and pepper to taste
  • 2 cups crushed buttery crackers such as Ritz
  • 0.25 cup butter melted

Instructions
 

  • Preheat oven to 350°F (175°C).
  • In a large bowl, combine the sliced yellow squash and chopped onion.
  • In a separate bowl, mix together the butter, sour cream, cream of chicken soup (or mushroom), and cheddar cheese. Season with salt and pepper.
  • Pour the sauce mixture over the squash and onion, stirring gently to combine.
  • Pour the mixture into a greased 9x13 inch baking dish.
  • In a small bowl, combine the crushed crackers and melted butter. Sprinkle evenly over the casserole.
  • Bake for 40-45 minutes, or until golden brown and bubbly.
  • Let cool slightly before serving.

Notes

This recipe can be easily doubled for larger gatherings.
