Sticky Toffee Pampoenkoekies

Delicious pumpkin fritters drizzled with a rich toffee sauce.

Ingredients
  

Fritters

  • 1 cup mashed pumpkin
  • 1 egg
  • 0.5 cup flour
  • 0.25 tsp baking powder
  • 0.5 tsp cinnamon
  • 2 tbsp oil For frying

Toffee Sauce

  • 0.5 cup brown sugar
  • 0.25 cup butter
  • 0.5 cup cream

Instructions
 

  • In a bowl, mash the pumpkin. Add the egg, flour, baking powder, and cinnamon. Mix well to form a batter.
  • Heat the oil in a frying pan over medium heat.
  • Drop spoonfuls of batter into the hot oil, flattening slightly.
  • Fry for 2-3 minutes per side, or until golden brown and cooked through.
  • Remove the fritters from the pan and drain on paper towels.
  • Meanwhile, make the toffee sauce: In a saucepan, combine the brown sugar, butter, and cream. Heat over medium heat, stirring constantly, until the sugar dissolves and the sauce thickens slightly.
  • Drizzle the toffee sauce over the warm fritters and serve immediately.

Notes

For a richer toffee sauce, use dark brown sugar.
